Mario Waldispühl is a young, enthusiastic kitchen chef of the Gasthof Krone Blatten restaurant in Malters, Switzerland. The native Lucerne chef is known for his creative and colorful cooking style which starts with fresh, seasonal ingredients grown locally throughout the region. From there, the chef and his staff apply imagination, a passion for cooking, and a love of food. This formula results in astonishing culinary combinations – a true feast for the eye and palate.

Whether he’s developing an elaborate multi-course menu, or making a ground-standing stew, the culinary talents of chef Mario Waldispühl extend well beyond the kitchen. Only a few months ago, the talented chef surprised attendees of the ILMAC exhibition in Basel, Switzerland by providing high-end, culinary creations to visitors at the KNF booth. Perhaps even more surprising than the location of the high-quality fare was the means by which they were created – using a KNF RC 900 Rotary Evaporator!

Mario Waldispühl explains the benefits of cooking with KNF’s RC Series Rotary Evaporator, and discusses his love for cuisine in the October, 2016 edition of KNF Neuberger, AG magazine, “Notabene” (German). The interview provided below is an excerpt from the English translation of the original article.


  1. While we are doing this interview, the summer season is already coming to an end, but the summer season Menu in Gasthof Krone Blatten is still up. – Which food would you order?”
    “Clearly the basil ravioli! By the way, it’s the dish from the summer menu, which I cook best.”
  2. Do you have a culinary wish that you have not yet met?
    “Fresh Maine lobster in a restaurant on the coast of Maine.”
  3. Is there a dish from your childhood that you have never got close to, what is your subjective opinion?
    “Grandma’s dumplings! In such taste memories, of course, it is above all about feelings, about emotional bonding.”
  4. Let’s go from the “normal kitchen” and the emotions into the world of technology. Cooking with a rotary evaporator – when did you hear about it for the first time?
    “About 10 years ago the molecular kitchen was very popular. This is where the rotary evaporator plays an important role. Because with it one can quickly and easily separate liquids, distill and boil at very low temperatures. The boiling point is considerably lower under vacuum; A tomato sauce, for example, boils in the rotary evaporator already at 40 degrees, whereas in classic cooking, between 70 and 80 degrees. I think every ambitious, modern chef dreams of cooking, experimenting with a rotary evaporator. For me it was so, but the devices are not quite cheap.”
  5. How did you get your rotary evaporator dream come true? Or in other words: How did you get to your rotary evaporator?
    “I was lucky! I have a regular guest working at KNF Flodos. One night I was talking about the rotary evaporator and he asked if I were tempted to cook with one . And so it happened that I came to an RC 900 from KNF and to return the favor, I will cook at KNF’s Ilmac booth.”
  6. When this article is published, the exhibition is already over – and the “culinary secret” has already been aired. Can you tell us, therefore, with which delicacies you would like to pamper your guests?
    “We start with a drink with chili and limes. Then there is tuna with chili, wasabi, seaweed- an indescribable taste experience! For dessert the main components will be chocolate and chili. And yes, chili did it to me; the results obtained with this spice with the rotary evaporator inspire me absolutely – an aromatics-technical revelation! We were able to hide the sharpness of the chili peppers, while the taste is fully revealed. So our “Little Experiment” at the fair is also very suitable for people who do not eat hot (spicy).”
  7. The RC 900 Rotary Evaporator from KNF is designed for laboratories. Is there something you think you should modify so that it is suitable for use in gastronomy?
    “No not at all. It is perfect for us as it is – no changes! Except when KNF would develop a model that cleans itself, then … Fun aside: It is in the nature of the matter that we need a lot of time to clean the RC 900, but this is easy and can not be changed. But you can dream.”

KNF’s Laboratory Symposium Offered an Evening of Exploration and Learning

Last week, KNF Neuberger Inc. hosted a Laboratory Pumps and Applications Symposium in collaboration with the Trenton Section of American Chemical Society (ACS). The event, a first of its kind, attracted attendees from local academia and industry.

Beginning in the early evening, the Lab Symposium kicked-off with a mixer featuring beverages and hors d’oeuvres. Attendees became better acquainted with each other, and more familiar with KNF laboratory equipment which was on display throughout the room. Soon after, guests were invited to a guided tour of KNF’s 50,000 square foot manufacturing facility. The tour, led by KNF Director of Sales and Marketing, Eric Pepe, allowed symposium guests to view important aspects of KNF’s pump production area including: assembly and testing stations, high-tech machining equipment, and state-of-the art inventory management systems.

Next, attendees were invited to help themselves to a complimentary hot buffet, featuring local Italian fare. Guests and staff carefully balanced plates, as they made way to their seats for the Laboratory Pumps and Applications presentation, delivered by KNF Laboratory Products Manager, and applications specialist, Roland Anderson (pictured right). The presentation featured a review of pump technologies, their pros/cons, and the benefits of their usage in several typical lab applications.

The evening was capped off with desserts and coffee, as well as a door prize drawing. Congratulations to the prize winners, and thank you to all who helped make this initial KNF Laboratory Pumps and Applications Symposium a success!

University of Connecticut Displays the Science – and Art – of Nanochemistry

If you happen to be in Connecticut over the next few months, check out the “Art in Nanochemistry” exhibit at the Stevens Gallery of Homer Babbidge Library at UConn. The exhibit, which runs through June 15th, showcases a collection of photomicrograph images showing objects at a near-billion magnification.

Thanks to the imagery captured by high power electron and/or optical microscopes, Professor Challa Vijaya Kumar—head of UConn’s Divisions of Physical and Biological Chemistry—and his Ph.D. students, have captured natural materials on a nano-level. The results yielded visually-engaging images that look right at home when displayed as framed art in a gallery setting.

Also on display is KNF’s RC 900 rotary evaporator. We like to think the form and function behind the RC 900 displays its own artistry, although, in this case it was selected to be part of this nano-scale themed exhibit to highlight rotary evaporation as an important laboratory tool for small molecule synthesis.

According to the University of Connecticut, the exhibit “is a collection of electron micrographs of nanomaterials from Dr. Kumar’s research group, created with support from the National Science Foundation, works of his colleagues at UConn, and also from the Materials Research Society Art-in-Chemistry annual competitions. Dr. Kumar and his group are investigating how these protein-DNA nanomaterials they create in the lab can be applied in enzyme fuel cells, DNA-solar cells, and neuroprosthesis for spinal cord repair.”

Pittcon 2015: KNF Technology Enables Faster, Simpler Rotary Evaporation Process

Greetings from NOLA! The KNF Lab team is checking in from the #pittcon15 Conference and Expo, booth #2211, in balmy New Orleans, LA. Among the new products, applications, and all-things-lab we’re looking forward to seeing this week, it’s also a great opportunity to raise awareness about our own innovations and contributions to the scientific community.

While some exhibitors may be launching products sure to be marketed as the “latest and greatest” this year, KNF is providing a simple, yet time-saving update to our already well-received RC 900 rotary evaporator.

As is the foundation of our business, we’ve listened to the industry, and learned how we can make lab practices easier. This continued research led to the development of an upgraded memory system, which saves precious time in the lab. Even though we’ve seen the amazed faces the RC 900’s features cause, we’re proud to announce that this memory function will provide a new level of simplified rotary evaporation.

While rotary evaporation often requires numerous flask exchanges, the process parameters sometimes don’t change. The time required to exchange the flask and input the same parameters during each step could be well-spent elsewhere. To remedy this, KNF developed a memory feature for the RC 900, which saves the rotary evaporator’s current immersion depth and rotation speed. Pressing the button on the Bluetooth-enabled wireless remote control allows the flask to be changed quickly, easily and reliably during iterative processes, as the instrument automatically re-sets to the previous depth and speed. Consequently, lab scientists need to simply press the button, and the RC 900 will take care of the rest.

How to Select a Pump for Rotary Evaporation

Application Note: LabEvaporation is one of the most common tasks performed in a chemistry laboratory. But, how do you go about selecting the correct vacuum pump for your rotary evaporator? Or, if you already have a vacuum pump, how do you know whether it is well-suited for this application?

The key to correctly selecting and sizing a vacuum pump for rotary evaporation can be found in your answers to the following four questions:

What solvents are you working with?

This is important due to the different boiling points of solvents. Solvents with a low boiling point, like acetone, methylene chloride and pentane, do not require as deep of an end vacuum to evaporate as solvents such as acetonitrile, benzene and chloroform. The removal of solvents with high boiling points, such as water, DMSO, DMF and toluene requires a relatively deep end vacuum. You must ensure that the pump is capable of reaching an end vacuum deep enough to remove the target solvents efficiently. For reference, see the Boiling Points Table.

This topic then naturally progresses to the need for chemical compatibility. Based on the solvent vapors going through the pump, one can determine the best materials for a long, trouble-free service life. Dry, oil-free pumps offer significant advantages in this area in comparison to rotary vane and water aspirators. In addition, they can feature premium, corrosion-resistant wetted parts, are easily maintained on site, and do not create hazardous waste.

What is the size of your evaporation flask?

This question allows you to select the best sized pump for your application. Bigger isn’t always better. A pump that is too large or has too high of a flow capacity for a given application is difficult to control, terribly inefficient and more expensive to own and operate. On the other hand, a pump that’s sized too small or doesn’t have enough flow capacity will slow the evaporation and lead to longer processing times. A pump that is used for a 250 mL flask is probably not the best pump for use with a 20 L evaporation flask, and vice versa.

What is the temperature of your heating bath?

The goal is to determine whether or not the pump is able to provide the necessary vacuum level and handle the vapor temperatures. The closer the bath temperature is to the boiling point of the solvent, the faster the rate of evaporation. If the mixture is not sensitive to elevated temperatures, increasing the bath temperature will speed the process and reduce the need for a deep vacuum pump. This may have an effect on which pump is best for the job.

How do you want to control the vacuum?

Manual, two-point, or adaptive control? Vacuum control allows for optimization of the vacuum level in the system. Optimum vacuum level shortens evaporation times and provides superior product yields. Control of the vacuum also reduces bumping and enables greater solvent recovery and repeatability.

  • Manual vacuum control involves the use of a stop cock or manual valve to adjust the vacuum level based on visual cues. Using this method, you will need to monitor throughout the process as the vacuum requirements may change throughout the evaporation.
  • Two point or on/off vacuum control allows the vacuum in the system to cycle between a high and low set point by turning the pump on and off. This method allows you to leave the process unattended once the min/max settings are determined.
  • Adaptive vacuum control provides the best results in terms of separation, speed and solvent recovery, and allows you to leave the process unattended once set. This type of control modifies the speed of the pump to precisely match the requirements of the process. It is the most accurate method; allowing for the system to operate at a specified vacuum level while responding to changing conditions without the need to monitor and adjust settings.

We’ve seen the favorable impressions from the lab industry; we’ve heard the positive reviews from the academics who tested it. And while our customers currently put it through its paces, it’s a great honor to announce the RC 900 has won a Red Dot Award for product design. The RC 900 was selected from a pool of 4,815 applications, from 53 countries, so we don’t take this internationally-recognized and well-respected award lightly.

The reasons behind the award winning design, however, come from a combination of two great voices: the product designers at KNF Neuberger, and…you. That’s right, our design team was wise enough to simply ask our customers what they were looking for in their next rotary evaporator. As pump manufacturers, part of our mission has been to develop vacuum pumps that connect to rotary evaporation devices. Therefore, we’ve been hearing from customers for years about simple fixes that could improve their process.

The RC 900 is the result of these conversations. The instrument has all the traits of a KNF product; it’s built extremely well, has a very long product life, and is backed by KNF’s global support system.   • Added safety with wireless remote control. Thanks to a Bluetooth remote control, you can simply dial in the characteristics the instrument needs to perform to – even from outside a closed fume hood. Touchscreen operation makes this job even easier.
  • Easy, fast flask exchange. Flasks can be exchanged quickly and easily, thanks to a new fastening clip that allows users to simply push the flask into the retainer until it locks into place. Removal is just as easy; to release, lift the fastening clip and remove the flask. A safety catch prevents the flask from slipping accidentally during removal.
  • Fully adjustable flask angle. Different flask sizes require adjustable pivoting to ensure the flask is properly immersed in the water or oil bath. Now, the optimum position can be set with ease using a fully adjustable control knob that adjusts the angle of the flask.
  • Space-saving, minimal footprint. Space on the bench is prime real estate. The reduced footprint of the RC 900 requires little bench space, and in return allows for a safer –and more organized- workspace.

Therefore, the Red Dot Award is validation for the effort we proudly put into the new RC 900 rotary evaporator. The combination of KNF ingenuity, and the strength of the customer input, has led to an instrument that leads the way into the new level of efficiency and effectiveness during rotary evaporation.
